Welsh Rarebit - “Isn’t it Just Cheese on Toast?”

Thick sliced bread, topped with a melted grilled cheese sauce, mustard and Worcestershire Sauce create a unique dish that is known as ‘Welsh Rarebit’. There are a few variations on this dish, which has been passed down through the generations in Wales. For example, it has been said that beer on top adds an extra ‘kick’, and others often choose to add mushrooms or onions. It is the special cheese sauce that differentiates Welsh Rarebit from the more simple cheese on toast, and it is a popular dish in many Welsh pubs.
